Before our café was built back in 2019, Tracy would make these lovely cookies for guests to enjoy. We hope you enjoy making these at home this Christmas season!
1 cup butter, softened
1 cup sugar
½ teaspoon almond extract
½ tea vanilla extract
2 cups flour
½ cup cocoa
¼ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 cup mini chocolate chips (semi-sweet)
Beat softened butter and 1 cup of sugar in a large mixer bowl until light and fluffy. Add egg and extracts, mix well.
Combine all dry ingredients and gradually add to the butter mixture, mixing until soft dough forms.
Stir in chocolate chips, cover and refrigerate for about 30 minutes.
Heat oven to 350 degrees. Shape dough into 1” balls; roll in additional sugar. Place on parchment lined cookie sheets about 2” apart. Place 2-3 slivered almonds on top of each ball; press slightly.
Bake for 9-10 minutes or until set. Let cool and enjoy!!
*If you would like to make these Lavender Chocolate Almond Cookies, you can add two teaspoons of culinary lavender to your dry ingredients!
